Hot sausage is the only way to go. the only time sweet sausage is decent is when you cook it with a nice breakfast. Any other time sausage is consumed it should always be hot.

In science, one should care less about writing style and more about the facts / data gathered / proper analysis. Good writing is, unfortunately, a bonus. I've not read the book myself, only read about the original study and what it showed.
Basically any animal protein, as far as I've read. Likely due to the bacteria that accompany it. nutritionfacts.org is pretty good about presenting summaries about different foods and ingredients, based on the current peer-reviewed research.
