It's a shame Tp4 has so little enthusiasm for the diversity in life despite his good fortune.
Beyond burger patties is as far as Tp4 has ventured. They're pretty delicious in Tp4's opinion, as they are greasy.
Ready-made patties are gross. Full of additives such as methyl cellulose, that is bad for your colon.
I'm afraid that all that methyl cellulose from all the vegan meat substitutes I've eaten throughout the years is likely to have been a contributing factor to why I don't have a colon any more.
My go-to recipe for a burger patty is a mix of:
- soy mince
- falafel mix
- grated cheese
- eggs
I sometimes have mince beans in there, grated carrots and/or grated beet root. Use frozen, thawed and minced tofu instead of the soy mince -- which is basically the same thing just with/out colouring.
The eggs are necessary to keep it together. I had used lupin-based vegan egg replacement when I couldn't eat eggs and that worked really well but it isn't as easy to get hold of.
The falafel mix swells in the excess moisture from the eggs, keeping the patty from being too soggy. The downside of using falafel mix is that it contains spices that mess with the flavour profile if you use too much. I sometimes add seitan powder (raw gluten) or just dried breadcrumbs instead. I think that seitan needs to be kneaded a little.
I use real cheese to add some fat to get it succulent. "Vegan cheese" contains emulsifiers that are probably not good for you: just omit if if you don't want it.
And of course you could fave flavourings such as spices, stock, MSG or nutritional yeast, but I mostly use mushroom powder which contains natural MSG.
